I just told my Mom, sisters and Aunt yesterday that my partner and I are getting married next year. No sooner had I said than they were discussing details like handmaking the wedding favors, making the cake for us and my three sisters asking to be bridesmaids
You can start by delaying them. When they make offers- just say you two are trying to make some decisions on things first- like where you want to get married, when you want to get married and the type of ceremony/wedding YOU TWO would like to have. When they start making offers, tell them you appreciate it- but you really have the planning under control.

I was in the very same situation. I had to just outright say, "Please, when I say no, it means no. Thank you for the offers, but this is my day and I would like it to remain that way." You can't please anyone anyway, so don't even try. Just be honest right now and you wont have a circus later.

Sounds to me like if your friend is okay by letting you spend this much money on her, and making you buy your own dress than she is still probably expecting a wedding gift as well.
